Mom’s Easy Chicken & Dumplings

This is a very easy, stick to your ribs, ‘slap your momma’ recipe.

1 whole roasted chicken, deboned.
2 cans of chicken broth, approx 32 ounces.
2 cans of cream of chicken soup,  plus 2 cans of water
1 half bag frozen or fresh carrots
Add pepper, cayenne,  and/or cumin to your taste. (1tsp each?)
Add above ingredients to stock pot and simmer with a slight boil for about 20-30 minutes. So about medium heat.

Take 2 cans of cheap biscuits and cut each biscuit into quarters. (80 dumplings) dust with about 1/2 cup of flour to coat so they aren’t sticky. Drop dumplings into stew a few at a time while stirring.  Let biscuit dumplings cook for about 15 minutes,  stirring often because they will puff up and rise to top. Keep stirring and pushing under liquid to cook. The flour from the dumplings,  and what falls from your hands, will thicken the stew.

Enjoy. It’s delicious.  Seriously yummy. Something to call your mom about and say ‘mom, that was so good’.
